Employment surpasses pre-pandemic levels

Nearly three and a half years after the pandemic rocked the restaurant industry, the total workforce has eclipsed its previous peak in February 2020. In Q3 of 2023, eating and drinking places have added more than 100,000 jobs—tripling the second quarter’s 36,300.

Drive-thrus powered by AI

Brooklyn Dumpling Shop is set to open a drive-thru lane in 2024 with smartphone-enabled geofencing technology and personalized loyalty messages powered by voice AI. Say that five times fast. The tech knows exactly when customers enter the lane and lets them order without lifting their phone to pay. The goal? Shaving 20 seconds off per customer to reduce customer lines.

Big $ in online food delivery

In the North American market, $64.8 billion by 2028 to be exact. That’s up from from $29.8B in 2022. Major factors for the growth include higher number of food outlets selling healthy meals, increase in demand for quick access to affordably priced food, and more use of delivery services. All aboard the convenience train.

With holidays around the corner, staff see more tips coming in. But is everyone getting their fair share? Hear two different ways industry leaders are approaching creating equality in their team’s tips:

 

Equal tip sharing with BOH. An advocate for fair wages, Ji Hye Kim shares the way she pays staff above industry standard in Michigan:

“Base pay for both FOH and BOH is $12 to $15 and tips gets divided by number of hours… that adds about $9 to $10 an hour. Once you get over the fear of having some of your pay fluctuate, the fluctuation is small enough that your pay is actually fairly consistent.”

Weighted tip pool with BOH. Katie Button started with an equal split before moving to a weighted structure with transparency around base pay rates and opportunities to improve:

“We’re able to share tips across the team, but we give a little bit higher tip percentage to those workers who have the opportunity to sell… We’ve coupled that with clear base pay rates and abilities to achieve raises based on education and training. So, in the BOH as you learn new stations, that’s how you get bumps. There are moments to move up… people see an opportunity to gain more money as well.”
